Vegan Baked Apples

Naturally sweet apples with a touch of cinnamon, vanilla, and coconut.

Ingredients
  

  • 6 apples (try Honeycrisp, Jonamac, or Ida Red)
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp virgin coconut oil melted
  • 1/2 cup water

Instructions
 

  • Preheat the oven to 350°F
  • Core and slice each apple into 16 thin pieces. I do not peel the apples; this is where most of the nutrition lies.
  • Place the apples into a 9x13 inch glass baking dish and toss with cinnamon, nutmeg, vanilla extract, and coconut oil. Add 1/2 cup water to the dish.
  • Bake in the oven for 45 minutes, stirring every 15 minutes. The water will concentrate and become syrup-like. If the dish seems dry when you stir, add another couple of tablespoons of water.
  • The apples are done when they are easily pierced with a fork and melt in your mouth.
  • Transfer to a serving bowl and drizzle the syrup from the baking dish over the top.
  • Serve warm.
