3cupsthinly sliced kale leaveslacinato, curly, or red russion

1cupcottage cheese
Pinchred pepper flakesoptional
1tbspfresh lemon juice
Instructions
Heat olive oil in a pan over medium heat until shimmering. Add the garlic and kale and season with salt. Cook about 3-4 minutes until the kale is wilted and tender. Let cool.
Transfer the kale to a food processor. Add cottage cheese and puree until smooth.
Move to a serving bowl and mix in the lemon juice. Sprinkle with a pinch of red pepper flakes (optional). Serve immediately with raw veggies or refrigerate for up to 3 days.
