Italian Sausage with Onions and Peppers

Ingredients
  

  • 1 to 1&1/2 pounds Italian sausage links or bulk sausage hot or sweet
  • 1/4 cup olive oil
  • 2 peppers green or red, hot or sweet
  • 1 large onion
  • 1 clove garlic minced
  • 1 cup no-sugar-added spaghetti sauce (or use homemade)
  • 1 cup shredded mozzarella cheese optional

Instructions
 

  • Slice the Italian sausage diagonally into 1/2 inch pieces and saute in the olive oil over medium-high heat (if using bulk sausage, just plunk it in the pan with the olive oil and break it up).
  • Meanwhile, slice the peppers into medium size strips and slice the onion about 1/4 inch thick.
  • When the sausage is about half done (takes about 5-7 minutes) stir in the peppers, onions, and garlic. Cook until the sausage is well done and the onion is translucent, about 5-7 additional minutes.
  • Stir in the spaghetti sauce and top with mozzarella cheese if desired.
