Farmer's Casserole
Shredded potatoes combine with cheese, ham, and eggs in a dish that can be served breakfast, lunch, or supper. Truly a fresh farm experience!

Ingredients

fresh grated or shredded potatoes

heavy whipping cream

seasoned salt

grated cheddar cheese
1½
cups
grated pepper jack cheese

chopped ham or sausage
Instructions
Preheat the oven to 350°F
Grease a 9x13 inch pan. Add the shredded potatoes to the bottom of the pan.
In a large bowl, whisk the eggs together. Then add half and half, seasoned salt, cheddar cheese, pepper jack, and chopped ham or other meat.
Pour over the top of the potatoes. Cover with foil. This can be refrigerated overnight if you want to prep ahead.
Bake covered in foil for 90 minutes. Let rest for 10 minutes before serving.
Notes
Try adding chopped peppers (fresh or frozen), spinach, chopped tomatoes or other vegetables
