1/2-1cupno sugar added pizza sauce
2garlic clovesminced
1/2oniondiced
1cupfresh spinach
sea saltto taste

3/4cupshredded mozzarella cheese
1/4cupchopped fresh basil or oregano
Instructions
Preheat the oven to 400°F.
Slice the eggplant lengthwise, about 1/4-1/3 inch thick. Brush olive oil on each side of the eggplant slices and place on a baking sheet. Sprinkle with salt and pepper. Bake in the oven for 7-10 minutes, or until eggplant is hot and starting to cook down.
While the eggplant is baking, add a tablespoon of olive oil to a large skillet. Heat over medium heat until shimmering and saute the garlic and onion until soft.
Add pizza sauce and spinach to the skillet and cook 1-2 additional minutes until mixture is warm and spinach has wilted.
Remove the eggplant from the oven and top each with the sauce mixture.
Sprinkle with cheese and chopped basil, then bake in the oven for about 2 minutes, until the cheese has melted. Serve immediately.
