Dilly Chicken Salad

Tender chicken with a creamy dressing and a punch of fresh dill.

Ingredients
  

  • 4 cups diced poached or baked chicken
  • 1 stalk celery diced or 1/4 cup shredded celeriac root
  • 2 scallions thinly sliced or 1/4 cup sweet onion cut into small dice
  • 1 bunch fresh dill, finely chopped (about 1/4 cup)
  • 1 cup mayonnaise I like Primal Kitchen avocado mayo
  • 2 teaspoons freshly squeezed lemon juice (about 1/2 lemon)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Dice or shred your chicken. I like to use a whole roasted chicken, both the white and dark meat removed from the bones.
  • In a large serving bowl, toss together the chicken, celery, scallions and dill. Set aside
  • In a small bowl, whisk together the mayo, lemon juice, mustard, salt and pepper. Add to the chicken and mix gently to combine. Refrigerate until ready to serve.
