Cilantro Lime Vinaigrette
A tangy, fresh dressing that goes perfectly with salad, lentils, or served over shrimp

Ingredients
Juice of 1 lime

Tbsp.
white wine vinegar
¼
tsp
salt

clove
garlic
or 1/2 teaspoon garlic powder
¼
cup
packed cilantro
½
cup
extra virgin olive oil
Instructions
In a food processor or blender add lime juice, vinegar, and salt. Pulse a few times to mix.
Add garlic and cilantro and pulse until finely chopped.
With the machine running, drizzle in the olive oil until emulsified.
Use immediately or store in the fridge in an airtight jar.
Whisk well before serving.
