Black Bean Soup
This creamy soup comes together very quickly in a blender. Top with a dollop of sour cream and green onions then serve with corn muffins.

- 2 cans black beans rinsed and drained or 2 cups of dried black beans, soaked overnight and boiled for 45 minutes
- 1 cup salsa
- 1 & 1/2 cups vegetable broth
- 1 tsp cumin
- Sour cream
- 1-2 green onions chopped
Blend the black beans, salsa, broth, and cumin in a blender until smooth. Top with sour cream and green onions.
