Beef and Barley Stew
A hearty stew for those cold, wet days. Tender beef, root vegetables, and barley will fill your belly.

Ingredients

pound
beef stew meat or round steak
cubed
1/4
cup
pearl barley
rinsed and drained
1 & 1/2
cups
diced onion
1
turnip
peeled, cut into 1/2 inch cubes (1 and 1/2 cups)

cups
diced carrots
1
cup
thinly sliced celery or grated celeriac

cups
low sodium beef broth
1
teaspoon
dried thyme leaves
1/2
teaspoon
dried sage
1/2
teaspoon
ground cumin
1/4
teaspoon
ground black pepper
2
cloves
garlic
minced
1
bay leaf
Salt to taste
Instructions
Salt the meat. Place in the bottom of a crock pot and add the barley on top.
Add onions, turnips, carrots, celery, and spices.
Pour broth over the top.
Cook on low 9-11 hours
Remove bay leaf before serving
