Crispy outside, creamy inside! These baked sweet potato fries are delicious on their own or dipped in an easy to prepare aioli sauce. A perfect winter side dish or snack!
Preheat oven to 450°F. The high temperature is necessary to get crispy fries with a creamy inside.
Slice the sweet potatoes into sticks that are about 4 inches long and 1/4 inch thick. Toss the potatoes with the olive oil and season with a generous pinch of salt.
Spread the sweet potatoes in a single layer onto a rimmed baking sheet lined with a silicone mat or parchment paper to prevent sticking.
Bake for 20-30 minutes, flipping the fries halfway through and checking occasionally to make sure they brown, but do not burn.
While the fries are baking, make your aioli by mixing together the mayonnaise, garlic powder, onion powder, chives, and salt. Taste and season with more salt if desired.
Serve the fries hot with aioli sauce for dipping. Makes about 8 servings.
Notes
Use extra aioli as a topping for burgers or a sandwich spread. If you don't want to use mayonnaise, try sour cream instead.
