Make a spice rub by combining olive oil, paprika, oregano, garlic, cumin, red pepper flakes, lime zest, kosher salt and pepper, then rub it all over the pork chops.
Grill the pork over direct heat until nicely charred, about 4 minutes per side. Move to indirect heat, and cover. Grill until internal temperature of pork reaches about 155˚ F for well-done.
Remove, cover and allow to rest at least 5 minutes.
