The Plan:
Day 1: Swim team spaghetti dinner
Day 2: Zucchini corn fritters, Greek salad
Day 3: Homemade pizza with homemade pesto, Tossed salad
Day 4: Greek marinated chicken, Baba ganoush with carrot sticks, cucumbers and pita chips
Day 5: Pasta with Italian sausage, fennel, leek, and basil, Balsamic roasted broccoli
Day 6: Tacos, Ants on a log
Day 7: Sloppy Joes, Green beans almondine
This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. CSA Breakdown:
For those of you also using Crossroads Community Farm, here is a breakdown of how I will use each piece of produce this week. See the first CSA post from this season for details of how I structure the plans.
1 Carrots (1.0 bag): cut into sticks to serve with baba ganoush. 2 shredded for tossed salad. Rest we use for snacking. They also will keep in the fridge for months
1 Fennel (1.0 bulb): Pasta dish
1 Broccoli (1.0 head): cut into florets then toss with olive oil and a little balsamic vinegar plus salt, then roast in the oven at 400 for 15 minutes or until tender. Served with pasta dish
2 Zucchini, Green and/or Gold (1.0 count): zucchini corn fritters
1 Basil (1.0 bunch): pasta dish, rest in the pesto for pizza
1 Celery (1.0 head): Half for Sloppy Joes, half for ants on a log
2 Eggplant, Japanese (1.0 count): baba ganoush
1 Beans, Green (1.0 bag): Green beans almondine
1 Onion – Fresh Yellow (1.0 count): Sloppy Joes
1 Lettuce Head, Red Summercrisp (1.0 head): Save a few leaves for tacos, the rest can be made into a salad to serve with pizza
2 Cucumber (1.0 count): 1 sliced to serve with baba ganoush
2 A1 Corn, Sweet (some tips cut) (1.0 count): zucchini corn fritters
1 Pepper, Green (1.0 count): Greek salad
1 Leeks, Bunching (1.0 bunch): 1 in zucchini corn fritters, 1 in pasta dish
