The Plan:

Day 1: Ground pork with cabbage and apples

Day 2: Baked lemon butter cod, Sweet potato fries with garlic aioli, Slow Cooker applesauce

Day 3: Homemade pizza, Greenhouse spinach salad

Day 4: Baked ham, mashed potatoes, corn muffins, Leftover spinach salad (Easter dinner)

Day 5: Eggplant parmesan (from freezer), Frozen fruit smoothie with super greens powder

Day 6: Potato and Sweet Pepper Soup (from freezer), Leftover corn muffins

Day 7: Beef and broccoli over rice

This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. Out of Storage: (preserved when in season and coming out of my root cellar, freezer, canned, or dehydrated stash)

Notes: Earth Month

I hope you are able to take some time to get outside a bit more in the month of April to enjoy all the Mother Earth has to offer. Connecting with nature helps to appreciate what we have…and what we won’t have if we don’t treat it with respect. Every time I visit a state park, go for a hike, or observe wildlife, I am reminded how precious our Earth is and I recommit to taking care of it.

This month I pledge to continue my efforts in the following areas:

  • Avoiding food waste
  • Reducing plastic use
  • Cutting back on my personal use of fossil fuels
  • Shopping local and buying used when possible
  • Living zero waste
  • Educating on environmental topics
