The Plan:
Day 1: Potato, fennel, and leek soup, Parmesan sage biscuits
Day 2: Beef and broccoli
Day 3: Homemade pizza, Tossed salad
Day 4: Pumpkin soup with cranberries and apples, Pumpkin date muffins
Day 5: Grilled steak, Baked sweet potato fries with garlic aioli
Day 6: Sesame noodles with totsoi
Day 7: Unstuffed cabbage, Homemade applesauce
This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. November 11th is a day filled with tradition. This is the day that, historically, unknown soldiers were buried and celebrated. It marks the end of World War I (the 11th hour of the 11th day of the 11th month). Finally, President Eisenhower signed a bill into law in 1957 officially declaring November 11th Veterans Day. Now, in America, we celebrate those that have served their country in parades and memorials all across America on November 11th.
I work at a VA hospital and am blessed to be able to help Veterans with their medications. Even when I am bogged down and stressed out from work, I try to remember to thank the Veterans that, in turn, I am ultimately there to serve.
There are lots of ways to serve your country, but joining the military to defend our freedom and democracy is a noble thing to do. If you are a Veteran and are reading this, thank you! If there is a Veteran in your life, remember to reach out and thank them this November 11th.
