The Plan:
Day 1: Lentil soup, Crusty sourdough bread
Day 2: Cheeseburgers (hold the bun), Coleslaw, Baked sweet potato fries
Day 3: Homemade pizza
Day 4: Roasted winter vegetables with cheesy polenta, Orange slices
Day 5: Cincinnati chili
Day 6: Homemade pesto (frozen) pasta with sundried tomatoes, Frozen fruit smoothie
Day 7: Sheet pan pumpkin pancakes with maple butter (I’m baking in a sheet pan instead of making on the stovetop), Apple slices
This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. Notes: Chili
Last January we ate chili almost weekly, and this year I decided to do the same. In fact, I’m going to make a different recipe each week, in search of the best chili!
Last week it was a vegan recipe with butternut squash and black beans. It was okay, but a little bland. I will have to tweak the spices to find more of my flavor before I post the recipe.
This week I’m going for a Cincinnati style chili, which has cinnamon and cocoa powder to deepen the flavor. It is one of my favorites and a contender for the best.
