Day 1: Ham and bean soup

Day 3: Homemade pizza, Tossed salad

Day 4: Grilled steak, Mashed butternut squash, Steamed broccoli

Day 5: Egg salad wraps with radish and leeks

Day 6: Homemade hummus, pita, olive, and veggie plate

Day 7: Tomato soup, Cheese quesadillas

Notes: I saved the ham bone and some chopped ham from our Christmas celebrations and now I am ready to make my annual ham and bean soup. This soup reminds me of my childhood when we would travel to Michigan to visit relatives and stop at the Country Kitchen for a bite. It has similar flavors to the Calico Bean soup that I still crave to this day. I haven’t seen a Country Kitchen in years and I don’t think they are in business anymore so my version of the soup is probably the closest I’m going to get. It’s funny how food is tied to so many memories!

It is also time to break into my freezer and use some of my summer stock. This time of year when it is cold, snowy, rainy, or cloudy I am so grateful that I spent a little extra time storing summer veggies. This way I can eat homemade meals, prepared with local food all year round, even in the Midwest. This is also a life saver on busy weeknights when I have minimal time to prep a meal. My first freezer break in will be for the tomato soup. I linked the recipe, but it isn’t really worth making unless you live somewhere that tomatoes are in season right now. I won’t judge if you open a can. Oh how I miss fresh tomatoes!!

I do still have some fresh veggies in my fridge from my CSA fall share at Crossroads Community Farm. Believe it or not, radishes keep pretty well for a while and I will be using some in the egg salad and some for the hummus plate. They work well chopped up and cooked in the curry recipe too. The beauty heart radishes are gorgeous on the inside (see above) and taste pretty mild. The Daikon radishes are a little spicier.
