This vegan baked apples recipe will fill your home with the most wonderful smells! They are easy to prepare and make an excellent side dish for any fall or winter meal.
Vegan Baked Apples
Naturally sweet apples with a touch of cinnamon, vanilla, and coconut.
Ingredients
- 6 apples (try Honeycrisp, Jonamac, or Ida Red)
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 2 tbsp virgin coconut oil melted
- 1/2 cup water
Instructions
- Preheat the oven to 350°F
- Core and slice each apple into 16 thin pieces. I do not peel the apples; this is where most of the nutrition lies.
- Place the apples into a 9x13 inch glass baking dish and toss with cinnamon, nutmeg, vanilla extract, and coconut oil. Add 1/2 cup water to the dish.
- Bake in the oven for 45 minutes, stirring every 15 minutes. The water will concentrate and become syrup-like. If the dish seems dry when you stir, add another couple of tablespoons of water.
- The apples are done when they are easily pierced with a fork and melt in your mouth.
- Transfer to a serving bowl and drizzle the syrup from the baking dish over the top.
- Serve warm.
