Sloppy Joes
Not just for camp! Even grown-ups will love this healthier version of a classic.
Ingredients
- 1 Tbsp olive oil
- 1 onion diced
- 1-2 stalks celery chopped or 1/4 cup shredded celeriac root omit if not in season
- 1 pound ground beef
- 1 Tbsp apple cider vinegar
- 1 Tbsp stone ground mustard or 1 tsp dried mustard
- 1/2 bottle of no sugar added ketchup (try Primal Kitchen brand)
- Hamburger buns optional
Instructions
- Heat olive oil over medium heat until shimmering. Sautee onions and celery in olive oil until soft.
- Add ground beef and cook until browned, breaking up with a wooden spoon.
- Mix together the vinegar, mustard, and ketchup then poor over the meat mixture. Stir until bubbly and well mixed.
- Divide mixture between four plates, or optionally serve on hamburger buns. I prefer to keep it low carb and omit the buns.
