Ingredients:
- 8 ounces linguine or 2 cups cooked rice (optional)
- 2 tbsp unsalted butter
- 1 pound medium shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes or to taste (optional)
- 1/4 cup white wine or chicken stock
- 1/4 cup freshly squeezed lemon juice
- Salt and pepper to taste
- Zest of 1 lemon
- 2 tbsp chopped fresh parsley
- 1/4 cup freshly grated Parmesan cheese
Directions:
Cook pasta or rice according to package instructions. We typically omit the pasta and rice for a low carb meal and serve with veggies instead (over spinach, or with a side of kale or sauteed carrots or nice salad).
Melt butter in a large skillet over medium high heat. Add shrimp, garlic and red pepper flakes if using. Cook, stirring occasionally, until pink, about 2-3 minutes. Stir in wine and lemon juice; season with salt and pepper to taste. Bring to a simmer; remove from heat and stir in pasta (if using), lemon zest, and parsley. Serve immediately, garnished with Parmesan.
