Shaved Beet Salad
Thinly sliced raw beets really shine in this winter side dish.
Ingredients
- Combination of 2-3 beets golden beets, or carrots
- 2 ounces crumbled feta optional
- 1/2 cup extra virgin olive oil
- 1 tsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Use a mandolin or vegetable peeler to thinly slice beets or carrots.
- Combine olive oil, balsamic vinegar, Dijon mustard, salt, and pepper and whisk until emulsified and well combined. Poor over veggies and toss to cover completely.
- Top with feta cheese (optional).
