Looking for a super quick meal? Look no further than sesame noodles with bok choi. Nothing needs cooking except the pasta. Throw all the dressing ingredients into a blender, you don’t even need to mince the garlic! Then toss with roughly chopped bok choi and other seasonal veggies along with warm pasta and dinner is done. There is an allergy warning to the recipe as it contains both peanuts and sesame.
Sesame Noodles with Bok Choi
Ingredients
- 3/4 pound Linguine use gluten-free if desired
- 1/4 cup Soy Sauce or gluten free Tamari
- 1/4 cup Rice Vinegar
- 6 tablespoons Cold Water
- 1 tablespoon grated ginger
- 1 clove garlic or 2 garlic scapes
- 6 tablespoons Peanut Butter or sunflower seed butter
- 3 tablespoons Peanut Oil
- 3 tablespoons Toasted Sesame Oil
- 1/2 teaspoon Hot Sauce
- 1.5 cup Bok Choi leaves separated and roughly chopped
- 1 tablespoon Sesame Seed toasted or black
Instructions
- Cook pasta according to package instructions.
- Combine soy sauce, vinegar, water, ginger, garlic, and peanut butter in a blender, puree until smooth. With engine running, drizzle in oils and optional hot sauce and puree until emulsified.
- Toss veggies with warm noodles, dressing, and sesame seeds and serve.
