Sauteed Beets with Orange Yogurt Dressing
Oranges sweeten the earthy flavor of beets.
Ingredients
- 2 large or 5 small beets peeled and grated
- 3 tablespoons Olive Oil
- 1 tablespoon Poppy Seeds
- Salt and Pepper to taste
- 1/2 cup Plain Yogurt
- 1 teaspoon grated orange zest
- 1 teaspoon fresh squeezed orange juice
Instructions
- Heat olive oil in a large skillet over medium-high heat until it shimmers.
- Add grated beets and season with salt and pepper. Cook, stirring frequently until soft, about 5 minutes then remove from heat. Stir in the poppy seeds and grated orange zest.
- In a small bowl, mix together the yogurt with orange juice. Serve with the beets to drizzle over the top. Sprinkle with additional orange zest if desired.
