Quinoa Salad with Veggies and Feta
This lightly dressed salad will give you a protein burst from the quinoa and feta and all your vitamins from the veggies. Sweet sun-dried tomatoes add a nice flavor that compliments the dressing.
Ingredients
- 1/2 cup quinoa
- 1 cup water
- 1 green or red bell pepper seeded and diced
- 1 & 1/2 cup shredded carrots
- 1 cup diced red cabbage
- 1/4 cup minced red onion
- 1/4 cup sun dried tomatoes from oil-packed jar, drained and minced
- 1 tbsp red wine vinegar
- 2 tsp Dijon mustard
- 2 tbsp olive oil
- salt and pepper to taste
- 2 tbsp feta cheese
Instructions
- Rinse quinoa under cold water and drain. Combine quinoa and 1 cup water in a medium saucepan. Bring to a boil, reduce heat, cover and cook 10 minutes until liquid is absorbed.
- Transfer quinoa to a large bowl and add green pepper, carrots, cabbage, onion, and sun-dried tomatoes.
- In a small bowl, whisk together vinegar, mustard, and oil. pour mixture over quinoa mixture and toss to combine.
- Season with salt and pepper to taste.
- Spoon mixture onto plates and top with feta (or just add the bowl and combine)

I took a cooking class in college and this was the first time I tried quinoa. I loved it! Sadly, I cannot remember who to give credit. I copied down the recipe (this is before smartphones were common) and have been using it every since.
