Quinoa Salad with Veggies and Feta

This lightly dressed salad will give you a protein burst from the quinoa and feta and all your vitamins from the veggies. Sweet sun-dried tomatoes add a nice flavor that compliments the dressing.

Ingredients
  

  • 1/2 cup quinoa
  • 1 cup water
  • 1 green or red bell pepper seeded and diced
  • 1 & 1/2 cup shredded carrots
  • 1 cup diced red cabbage
  • 1/4 cup minced red onion
  • 1/4 cup sun dried tomatoes from oil-packed jar, drained and minced
  • 1 tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 tbsp feta cheese

Instructions
 

  • Rinse quinoa under cold water and drain. Combine quinoa and 1 cup water in a medium saucepan. Bring to a boil, reduce heat, cover and cook 10 minutes until liquid is absorbed.
  • Transfer quinoa to a large bowl and add green pepper, carrots, cabbage, onion, and sun-dried tomatoes.
  • In a small bowl, whisk together vinegar, mustard, and oil. pour mixture over quinoa mixture and toss to combine.
  • Season with salt and pepper to taste.
  • Spoon mixture onto plates and top with feta (or just add the bowl and combine)

Notes

I took a cooking class in college and this was the first time I tried quinoa. I loved it! Sadly, I cannot remember who to give credit. I copied down the recipe (this is before smartphones were common) and have been using it every since.
