Servings 12 biscuits

Ingredients

  • 4 cups flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, cold
  • 2 large eggs
  • 1 cup buttermilk
  • 1&1/2 cup shredded Parmesan cheese
  • 1 cup minced fresh sage or savory

Instructions

  • Preheat the oven to 400°F
  • In a large bowl, mix the flour, baking powder, baking soda, and salt
  • Cut the cold butter into half-inch chunks and place in the dry ingredients. Use your fingers or a pastry cutter to blend into the dry ingredients until the mixture is like course meal.
  • Stir the sage/savory and cheese into the mixture.
  • In a separate bowl, break the egg and lightly beat. Add in the buttermilk and mix. Pour all at once into the dry ingredients and stir quickly until a dough ball forms.
  • Place the dough ball on a flour surface and knead a few times, then let it rest for a minute.
  • Roll out the dough to 3/4 inch thickness. Use a 2 inch round cookie cutter (or the top of a 2 in glass) to cut out circles.
  • Place the biscuits on a baking sheet about 1 inch apart and bake in the oven for 15 minutes or until golden brown.
