Who doesn’t love meatloaf? This version sneaks in some greens and is stuffed with mozzarella cheese. Definitely a family favorite!
- Mix with your hands
- Pat half the meat into a loaf pan
- Top with mozzarella and then pat the other half of meat on top
- Spread the ketchup/mustard mixture evenly
- Bake and eat!

Mozzarella Stuffed Turkey Meatloaf
Gooey mozzarella adds a fun twist on a classic dinner dish.
Ingredients
- 1 & 1/2 pounds ground turkey
- 10 oz frozen chopped spinach thawed and squeezed well (or 6 cups fresh, sauteed until wilted, drained and squeezed well)
- 1/2 cup minced onion
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- 2 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz (1 cup) grated mozzarella cheese
- 2 tbsp ketchup
- 2 tbsp Dijon mustard
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine turkey, spinach, onion, parsley, oregano, eggs, salt, and pepper. Mix well with a spoon or your clean hands.
- Press half the mixture into an 8 inch loaf pan.
- Top the bottom half with grated cheese. Press remaining turkey mixture over the top and flatten to make an even layer.
- Whisk together ketchup and mustard and spread mixture over prepared meatloaf.
- Bake 1 hour until top is golden and loaf has pulled away from the sides of pan. Let stand for 10 minutes before serving.
