This is a super simple lasagna recipe that you will make again and again. I sneak in some greens with the meat sauce to add nutrition.

When I am out of my own homemade pasta sauce, I substitute with Muir Glen, which uses whole ingredients and is the only no sugar added pasta sauce I have been able to find.
Lasagna
Ingredients
- 8 lasagna noodles
- 1.5 - 2 pounds ground beef, chicken, pork, or turkey
- 16 ounces cottage cheese
- 26 ounces spaghetti sauce from jar or homemade
- 2 cups shredded mozzerella cheese
- 1 bunch spinach or kale chopped into small pieces (optional)
Instructions
- Bring a large pot of water to a rolling boil and add the lasagna noodles. Continue to cook until the noodles until just soft. Do not overcook.
- Meanwhile, brown the meat, breaking it up with a spatula as it cooks.
- Once the meat is fully cooked, now is the time to add the spinach or kale if you are using it. Cook about 1-2 minutes until wilted.
- Add cottage cheese and spaghetti sauce to meat and mix well.
- Assemble the lasagna: Place 4 noodles on bottom of 9x13 inch pan. Spread half the meat mixture over the noodles. Sprinkle on half of the mozzarella. Repeat layers one more time.
- Bake at 350 degrees F for 30 minutes until nice and bubbly.
