Kale dip
Chopped kale blended with cottage cheese and spices. Kale never tasted so good!
Ingredients
- 1 tbsp extra-virgin olive oil
- 1 minced garlic clove or 1/2 tsp garlic powder
- 3 cups thinly sliced kale leaves lacinato, curly, or red russion
- Course salt
- 1 cup cottage cheese
- Pinch red pepper flakes optional
- 1 tbsp fresh lemon juice
Instructions
- Heat olive oil in a pan over medium heat until shimmering. Add the garlic and kale and season with salt. Cook about 3-4 minutes until the kale is wilted and tender. Let cool.
- Transfer the kale to a food processor. Add cottage cheese and puree until smooth.
- Move to a serving bowl and mix in the lemon juice. Sprinkle with a pinch of red pepper flakes (optional). Serve immediately with raw veggies or refrigerate for up to 3 days.
