Kale dip

Chopped kale blended with cottage cheese and spices. Kale never tasted so good!

Ingredients
  

  • 1 tbsp extra-virgin olive oil
  • 1 minced garlic clove or 1/2 tsp garlic powder
  • 3 cups thinly sliced kale leaves lacinato, curly, or red russion
  • Course salt
  • 1 cup cottage cheese
  • Pinch red pepper flakes optional
  • 1 tbsp fresh lemon juice

Instructions
 

  • Heat olive oil in a pan over medium heat until shimmering. Add the garlic and kale and season with salt. Cook about 3-4 minutes until the kale is wilted and tender. Let cool.
  • Transfer the kale to a food processor. Add cottage cheese and puree until smooth.
  • Move to a serving bowl and mix in the lemon juice. Sprinkle with a pinch of red pepper flakes (optional). Serve immediately with raw veggies or refrigerate for up to 3 days.
