Italian sausage with onions and peppers is a super easy low carb meal. Use fresh peppers in the summer and fall and frozen in the winter and spring. Either way, dinner will be done in about 15 minutes! If you are ambitious, try making your own homemade pasta sauce.
Italian Sausage with Onions and Peppers
A delicious 15 minute low-carb meal
Ingredients
- 1 to 1&1/2 pounds Italian sausage links or bulk sausage hot or sweet
- 1/4 cup olive oil
- 2 peppers green or red, hot or sweet
- 1 large onion
- 1 clove garlic minced
- 1 cup no-sugar-added spaghetti sauce (or use homemade)
- 1 cup shredded mozzarella cheese optional
Instructions
- Slice the Italian sausage diagonally into 1/2 inch pieces and saute in the olive oil over medium-high heat (if using bulk sausage, just plunk it in the pan with the olive oil and break it up).
- Meanwhile, slice the peppers into medium size strips and slice the onion about 1/4 inch thick.
- When the sausage is about half done (takes about 5-7 minutes) stir in the peppers, onions, and garlic. Cook until the sausage is well done and the onion is translucent, about 5-7 additional minutes.
- Stir in the spaghetti sauce and top with mozzarella cheese if desired.
