Ingredients:

  • 1/2-1 pound large, raw shrimp, peeled/deveined
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • Juice of 1 lime
  • Zest of 1 lime
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups of cooked rice for serving (optional)

Directions: Combine all ingredients in a bowl and let marinade for 1 hour (or overnight if you want to prep ahead) in the refrigerator. Let sit for 10 minutes at room temperature. Cook for 4-5 minutes over medium heat until shrimp are cooked through. Serve over rice if desired. This meal can be made ahead and frozen and then defrosted overnight in the refrigerator. You can also make the rice ahead and freeze it.
