This wonderful fall recipe comes from the farm where we get a weekly vegetable share. The spice mix is great with the pork, but could also be used with ground turkey or chicken. I typically use honeycrisp, ida red, or cortland apples, but really you could use any apple you have on hand. Cooking apples usually increases the sweetness.

Ground Pork with Cabbage and Apples

A favorite in my family! Shredded cabbage and apples mix well with a nicely spiced ground pork sausage.

Ingredients
  

  • 1 pound ground pork
  • 1 small or medium green or purple cabbage cored and chopped (could also run through a food processor to shred)
  • 1 garlic scape, garlic clove, or 1/2 tsp garlic powder
  • 1 onion chopped
  • 2 apples of choice, chopped (try gala, pink lady, honeycrisp, ida red, or cortland)
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground pepper
  • 1 teaspoon salt

Instructions
 

  • Mix the sage, 1/4 tsp garlic powder, onion powder, thyme, cayenne, ground pepper, and salt.
  • Mix seasoning into ground pork to evenly distribute
  • Cook the ground pork in a large skillet over medium heat until no longer pink, approximately 10 minutes.
  • Take the ground pork out of the pan and set aside.
  • Add the onion, garlic, and apples into the pan.
  • Cook the onions, garlic, and apples until everything starts to lightly brown, mixing occasionally. This will take approximately 10 minutes, depending on your skillet and stove.
  • Once the onion and apples are lightly browned, add in the cabbage and mix well to incorporate everything. The cabbage will overwhelm the skillet, but it will quickly wilt and cook down. Cook for 3-5 minutes, until cabbage starts to wilt but is still bright green or purple.
  • Add back in the ground pork and mix well. Serve warm.
