Greek Salad
A refreshing, healthy salad. Serve alone or with spanikopita, gyros, or greek chicken.
Ingredients
Salad
- 1/2 red onion, diced
- 1/4 cup pitted Kalamata olives
- 1 green pepper, chopped
- 4 Roma tomatoes, chopped
- 1 cucumber, chopped
- 1 cup feta cheese, crumbled
Dressing
- 1/3 cup extra virgin olive oil
- 1/2 lemon, juiced
- 2 tbsp red wine vinegar
- 1 tsp dried oregano leaf
- 1/2 tsp dried basil
Instructions
- Combine all dressing ingredients in a small bowl or Mason jar and mix well.
- In a large bowl combine the onion, olives, green pepper, tomatoes, cucumber and feta cheese.
- Pour the dressing over the salad and toss to combine.
