Ingredients
  

Salad

  • 1/2 red onion, diced
  • 1/4 cup pitted Kalamata olives
  • 1 green pepper, chopped
  • 4 Roma tomatoes, chopped
  • 1 cucumber, chopped
  • 1 cup feta cheese, crumbled

Dressing

  • 1/3 cup extra virgin olive oil
  • 1/2 lemon, juiced
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano leaf
  • 1/2 tsp dried basil

Instructions
 

  • Combine all dressing ingredients in a small bowl or Mason jar and mix well.
  • In a large bowl combine the onion, olives, green pepper, tomatoes, cucumber and feta cheese.
  • Pour the dressing over the salad and toss to combine.
