Shredded potatoes combine with cheese, ham, and eggs in a dish that can be served breakfast, lunch, or supper. Truly a fresh farm experience!

Ingredients
  

  • 3 cups fresh grated or shredded potatoes
  • 12 eggs
  • 2 cups heavy whipping cream
  • 1 tsp seasoned salt
  • cups grated cheddar cheese
  • cups grated pepper jack cheese
  • 2 cups chopped ham or sausage

Instructions
 

  • Preheat the oven to 350°F
  • Grease a 9x13 inch pan. Add the shredded potatoes to the bottom of the pan.
  • In a large bowl, whisk the eggs together. Then add half and half, seasoned salt, cheddar cheese, pepper jack, and chopped ham or other meat.
  • Pour over the top of the potatoes. Cover with foil. This can be refrigerated overnight if you want to prep ahead.
  • Bake covered in foil for 90 minutes. Let rest for 10 minutes before serving.

Notes

Try adding chopped peppers (fresh or frozen), spinach, chopped tomatoes or other vegetables
