Farmer's Casserole
Shredded potatoes combine with cheese, ham, and eggs in a dish that can be served breakfast, lunch, or supper. Truly a fresh farm experience!
Ingredients
- 3 cups fresh grated or shredded potatoes
- 12 eggs
- 2 cups heavy whipping cream
- 1 tsp seasoned salt
- 1½ cups grated cheddar cheese
- 1½ cups grated pepper jack cheese
- 2 cups chopped ham or sausage
Instructions
- Preheat the oven to 350°F
- Grease a 9x13 inch pan. Add the shredded potatoes to the bottom of the pan.
- In a large bowl, whisk the eggs together. Then add half and half, seasoned salt, cheddar cheese, pepper jack, and chopped ham or other meat.
- Pour over the top of the potatoes. Cover with foil. This can be refrigerated overnight if you want to prep ahead.
- Bake covered in foil for 90 minutes. Let rest for 10 minutes before serving.
