Eggplant pizza

This is a super easy, low-carb version of the real thing. A great way to sneak in those veggies!

Ingredients
  

  • 1 large globe eggplant
  • 1 tablespoon olive oil plus more for brushing eggplant
  • 1/2-1 cup no sugar added pizza sauce
  • 2 garlic cloves minced
  • 1/2 onion diced
  • 1 cup fresh spinach
  • sea salt to taste
  • ground pepper to taste
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or oregano

Instructions
 

  • Preheat the oven to 400°F.
  • Slice the eggplant lengthwise, about 1/4-1/3 inch thick. Brush olive oil on each side of the eggplant slices and place on a baking sheet. Sprinkle with salt and pepper. Bake in the oven for 7-10 minutes, or until eggplant is hot and starting to cook down.
  • While the eggplant is baking, add a tablespoon of olive oil to a large skillet. Heat over medium heat until shimmering and saute the garlic and onion until soft.
  • Add pizza sauce and spinach to the skillet and cook 1-2 additional minutes until mixture is warm and spinach has wilted.
  • Remove the eggplant from the oven and top each with the sauce mixture.
  • Sprinkle with cheese and chopped basil, then bake in the oven for about 2 minutes, until the cheese has melted. Serve immediately.
