Easy Cucumber and Tomato Salad
Ingredients
- 1-2 cucumbers, thinly sliced
- 1-2 medium sized tomatoes, sliced OR a small carton of cherry tomatoes cut in half
- 1/2 small sweet onion, thinly sliced
- 2 teaspoons red wine vinegar
- 1/4 cup olive oil
- sea salt to taste
- pepper to taste
Instructions
- Use a mandolin to thinly slice your cucumbers and onion and add to a medium sized bowl.
- Slice the tomatoes and add to the bowl.
- In a small bowl, whisk the vinegar and olive oil. Pour over the vegetables and toss to coat
