Easy Grilled Chicken Caesar Salad
Crisp lettuce, grilled chicken, simple Caesar dressing, and homemade croutons make for an easy, fresh meal.
Ingredients
- 4-6 chicken breasts or thighs
- 1 head of lettuce green or red
- 1 pint Sungold tomatoes
- 1/2 bottle store bought Caesar dressing I like Primal Kitchen which is gluten/dairy free, made with avocado oil, and has no added sugar
- Croutons optional
Instructions
- Grill or bake the chicken until reaches an internal temperature of 165 degrees F. I prefer to use bone-in chicken because it is more moist and flavorful and I can use the leftover bones to make broth.
- Meanwhile, wash and chop the lettuce. Spin dry and place in a large bowl.
- When the chicken is done and cool enough to handle, pull the meat off the bones and dice, then place in the bowl with the lettuce.
- Slice the tomatoes in half and add to the salad.
- Add a 1/2 bottle of store-bought Caesar dressing. Toss to coat, sprinkle croutons over the top (optional), and serve immediately.
Notes
If you want to eat some of the salad at a later date, put some aside before adding the dressing. Once the lettuce is coated, it will not store well.
