Dilly Chicken Salad
Tender chicken with a creamy dressing and a punch of fresh dill.
Ingredients
- 4 cups diced poached or baked chicken
- 1 stalk celery diced or 1/4 cup shredded celeriac root
- 2 scallions thinly sliced or 1/4 cup sweet onion cut into small dice
- 1 bunch fresh dill, finely chopped (about 1/4 cup)
- 1 cup mayonnaise I like Primal Kitchen avocado mayo
- 2 teaspoons freshly squeezed lemon juice (about 1/2 lemon)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Dice or shred your chicken. I like to use a whole roasted chicken, both the white and dark meat removed from the bones.
- In a large serving bowl, toss together the chicken, celery, scallions and dill. Set aside
- In a small bowl, whisk together the mayo, lemon juice, mustard, salt and pepper. Add to the chicken and mix gently to combine. Refrigerate until ready to serve.
