Crockpot Cheesy Cauliflower Soup

Ingredients
  

  • 2 cups chicken broth
  • 16 oz frozen cauliflower (2 x 8oz bags) or 1 head fresh cauliflower cut into florets
  • 1 medium stalk celery, chopped OR grated celeriac root
  • 1 medium carrot chopped
  • 1/2 cup onion diced
  • 1/2 tsp thyme
  • 1 cup milk
  • 1&1/2 cups shredded cheddar cheese
  • Sea salt and pepper to taste

Instructions
 

  • Throw all the ingredients except milk and cheese into a crock pot and cook on low until veggies are very tender 4-6 hours.
  • Pour into a food processor or use an immersion blender to blend until smooth.
  • Return to pot and stir in milk and cheese over low heat
  • Serve warm
