Crockpot Cheesy Cauliflower Soup
This delicious creamy soup takes just minutes to prepare. Let your Crock Pot do all the work!
Ingredients
- 2 cups chicken broth
- 16 oz frozen cauliflower (2 x 8oz bags) or 1 head fresh cauliflower cut into florets
- 1 medium stalk celery, chopped OR grated celeriac root
- 1 medium carrot chopped
- 1/2 cup onion diced
- 1/2 tsp thyme
- 1 cup milk
- 1&1/2 cups shredded cheddar cheese
- Sea salt and pepper to taste
Instructions
- Throw all the ingredients except milk and cheese into a crock pot and cook on low until veggies are very tender 4-6 hours.
- Pour into a food processor or use an immersion blender to blend until smooth.
- Return to pot and stir in milk and cheese over low heat
- Serve warm
