Sweet and Salty Broccoli Salad
Creamy mayo, sweet raisons, crispy bacon, and broccoli combine in an unexpected way.
Ingredients
- 1/2 pound bacon optional
- 1 head broccoli
- 1 bulb onion or scallion
- 1/4 cup raisins
- 1/2 cup sunflower or raw pumpkin seeds
- 3/4 cup mayonnaise Try Primal Kitchen made with avocado oil
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
Instructions
- Chop the bacon into small pieces, then cook in a medium frying pan until crispy. Remove from the pan with a slotted spoon and place in a large bowl. (Skip this step if you want to keep it vegetarian)
- Cut the broccoli florets off the stem and separate into small pieces. Peel the woody part off the stem and then chop into 1/2 inch pieces. Place all the broccoli in the large bowl with the bacon.
- Cut the onion in half and then peel and thinly slice. Transfer to the bowl.
- Add the raisins and seeds to the bowl.
- In a small bowl, combine the mayonnaise with the balsamic vinegar, then add to the salad and stir until combined.
- Season with salt and pepper to taste.

Make ahead and store in the refrigerator for up to 3 days before using.
