Cilantro Lime Rice
Tender rice, fresh cilantro, and a hint of lime. Top with grilled veggies, black beans or meat - just like your favorite burrito joint!
Ingredients
- 2 tbsp olive oil
- 1 & 1/2 cups Basmati rice white or brown
- 1 clove garlic minced or 2 garlic scapes finely chopped
- 3 cups water
- 1 teaspoon salt
- Zest of one lime
- 2-3 tbsp lime juice (juice from 1 lime)
- 1 cup chopped cilantro leave and stems
Instructions
- Heat olive oil in a medium saucepan over medium high heat until it shimmers.
- Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown.
- Add the garlic and cook one more minute
- Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low. You may need to add more water if the pan is dry before the rice is fully cooked. Simmer for 10-15 minutes (or per package instructions)
- Remove from heat and let sit for 10 minutes
- Pour in lime juice and toss with chopped cilantro.

Make burrito bowls by topping with black beans, chicken, steak, shrimp, grilled veggies or avocado
