INGREDIENTS:
- 1/2 cup Greek yogurt or sour cream
- 1 tbsp white wine vinegar
- 1/2 teaspoon ground cumin
- salt and pepper to taste
- 3/4 pound large carrots (2-3)
- 2 apples, halved and cored
- 1/2 cup raisins (regular or golden)
- 1/4 cup chopped cilantro
DIRECTIONS:
In a large bowl, whisk together the yogurt, vinegar, cumin, 1/2 tsp salt, and 1/4 tsp pepper. Shred the carrots and apples on a grater box or in a food processor fitted with the grating disk. Add the carrots, apples, raisins, and cilantro to the yogurt dressing and toss to combine.
