Broccoli Cheddar Soup

Ingredients
  

  • 1/2 cup butter (1 stick)
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 4 tbsp corn starch
  • 4 cups low sodium chicken or vegetable broth
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp smoked paprika
  • 4 cups broccoli florets and diced stems (from 1 large head)
  • 1 large carrot grated
  • 2 cups heavy cream
  • 4 cups grated cheddar cheese

Instructions
 

  • Melt butter in a stock pot over medium high heat
  • Add onion and sauté 3-4 minutes until softened
  • Add garlic and sauté until fragrant, about 30 seconds
  • Add the corn starch and whisk until the it begins to turn golden
  • Add the broth, salt, pepper, paprika, broccoli, and carrot then bring to a boil. Reduce heat to medium low and simmer for 15 minutes until the vegetables are soft.
  • Stir in the heavy cream and cheddar cheese, then stir and simmer for another minute until the cheese is melted.
  • Taste and add more salt/pepper as desired. Serve warm.
