Broccoli Cheddar Soup
Creamy, comforting, classic soup with fresh and simple ingredients
Ingredients
- 1/2 cup butter (1 stick)
- 1 medium onion chopped
- 4 cloves garlic minced
- 4 tbsp corn starch
- 4 cups low sodium chicken or vegetable broth
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp smoked paprika
- 4 cups broccoli florets and diced stems (from 1 large head)
- 1 large carrot grated
- 2 cups heavy cream
- 4 cups grated cheddar cheese
Instructions
- Melt butter in a stock pot over medium high heat
- Add onion and sauté 3-4 minutes until softened
- Add garlic and sauté until fragrant, about 30 seconds
- Add the corn starch and whisk until the it begins to turn golden
- Add the broth, salt, pepper, paprika, broccoli, and carrot then bring to a boil. Reduce heat to medium low and simmer for 15 minutes until the vegetables are soft.
- Stir in the heavy cream and cheddar cheese, then stir and simmer for another minute until the cheese is melted.
- Taste and add more salt/pepper as desired. Serve warm.
