Broccoli Alfredo
Don't buy your alfredo sauce with all the yucky additives, make your own clean version with this simple broccoli alfredo recipe. Add cooked chicken or tofu for protein.
Ingredients
- 1 stalk broccoli
- 1/4 cup butter
- 1 cup heavy cream
- 1 clove garlic crushed
- 1 & 1/2 cups freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 pound cooked linguine or other pasta
- 2 cups diced cook chicken or tofu (optional)
Instructions
- Cook pasta according to package directions.
- Meanwhile, chop the broccoli into 1 inch pieces, including the stem (peel first). Steam broccoli until bright green and fork tender but still a little crisp, about 5 minutes.
- Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley.
- Place the cooked pasta in a bowl and top with the broccoli, sauce, and optional chicken or tofu. Toss and serve hot.
