Braised Cabbage with Apples and Bacon
Tender cooked cabbage, crispy bacon, and fresh apples infused with cinnamon.
Ingredients
- 1 small head Red or Green Cabbage
- 6 ounces Bacon medium dice (optional)
- 2 tablespoons Olive Oil (only needed if omitting bacon)
- 1 cup Onion medium dice
- Salt and Pepper to taste
- 1 cup Red Wine
- 1 Cinnamon Stick
- 2 Apples cored and diced
- 2 tablespoons Apple Cider Vinegar
Instructions
- Core and shred the cabbage with a chef's knife. Alternatively you can put the cabbage through your food processor with a slicing blade.
- Skip to the next step if you are not using bacon. If using bacon, heat a large skillet over medium heat and cook bacon until fat is rendered and bacon is crisp. Remove the bacon with a slotted spoon and place on a plate.
- If you are not using bacon, heat the olive oil over medium heat until it shimmers. Add the onions to either the olive oil or bacon fat and cook until translucent, about 5 minutes.
- Add the cabbage and sauté for 5 minutes. The cabbage will seem to overwhelm your pan, but it will quickly cook down. Season with salt and pepper.
- Add the wine and cinnamon sticks. Cover and braise until the cabbage is tender, about 30 minutes.
- Stir in the apples and vinegar.
- Cover and continue braising until the apples are tender, about 5 more minutes. Remove the cinnamon sticks and season to taste with salt and pepper.
- Serve immediately with bacon on top (optional).
