This BLT chopped salad is so refreshing and easy. It is the classic bacon, lettuce, and tomatoes, accented with corn and feta. This is the perfect light, weeknight meal. A “chopped” salad means that everything is cut up really small. That means that the flavors meld together really well and it is easier to eat. BLT Chopped Salad

A refreshing salad that even the kids will love! Chop it up small and eat it all up.

Ingredients
  

  • 4 cups lettuce chopped well
  • 1 cup grape or cherry tomatoes quartered
  • 4 slices bacon
  • 1 cup sweet corn from about 2-3 cobs
  • 4 ounces crumbled feta cheese
  • 1/4 cup olive oil
  • 1 lime juiced
  • 1/4 tsp salt
  • pepper to taste

Instructions
 

  • Chop the bacon into small pieces and place in a skillet. Cook, stirring frequently, on medium high until crisp. Remove with a slotted spoon and place on a plate to cool
  • While the bacon is cooking, place the lettuce on a large cutting board. With a large chef's knife chop it up, running the knife through in several directions until it is chopped to your desired size. Place in a salad spinner, wash, and spin dry. Remove to a large serving bowl.
  • Quarter the tomatoes and cut the corn off the cob and place both into the bowl on top of the lettuce.
  • In a small bowl, whisk together the olive oil, lime juice, salt and pepper. Pour over the salad and toss to coat.
  • Top with bacon and feta cheese, then serve.
