This black bean soup recipe came to me by way of an awesome coworker. It is so incredibly easy, that dinner will be done in 10 minutes! Simply blend the ingredients in a blender, then top with a dollop of sour cream and a sprinkle of green onions. Corn muffins pair perfectly to make a meal.
Black Bean Soup
This creamy soup comes together very quickly in a blender. Top with a dollop of sour cream and green onions then serve with corn muffins.
Ingredients
- 2 cans black beans rinsed and drained or 2 cups of dried black beans, soaked overnight and boiled for 45 minutes
- 1 cup salsa
- 1 & 1/2 cups vegetable broth
- 1 tsp cumin
- Sour cream
- 1-2 green onions chopped
Instructions
- Blend the black beans, salsa, broth, and cumin in a blender until smooth. Top with sour cream and green onions.
