Beef and Broccoli
This stir fry is so simple, yet so delicious! Definitely add other veggies that need to be eaten up.
Ingredients
- 1 cup Rice
- 1 pound Boneless Top Sirloin
- 1 tablespoon fresh grated ginger
- 1 tablespoon minced garlic OR 2 garlic scapes OR 1 teaspoon garlic powder
- 3 tablespoons Soy Sauce or Tamari
- 1 tablespoon Cornstarch optional if you don't want to thicken
- 2 tablespoons Toasted Sesame Oil
- 1 pound Broccoli cut into florets; peel the stem and chop
- 3 tablespoons Water
Instructions
- Place rice in a medium saucepan and cover with 2 cups of water. Bring to a boil, then turn the temperature to low and simmer until water is absorbed and rice is tender, about 20 minutes.
- Trim beef, and slice the steak diagonally across the grain into thin slices. In a medium bowl, mix together the ginger, garlic, soy sauce and cornstarch. Add the beef and toss to mix well.
- In a 10-inch skillet, heat the oil over high heat until hot. Add the meat mixture. Cook, stirring, over high heat, until the meat loses its redness, 5 to 10 minutes. Remove to a plate.
- Add the water and broccoli florets/peeled stems to the skillet and heat to boiling. Reduce the heat to medium-low, cover, and simmer for 4-5 minutes, or until the broccoli is tender.
- Return the meat to the skillet and heat to a simmer, stirring, until warmed through.
- Serve over rice

Notes: definitely add other veggies to this such as snow peas, radishes, or salad turnips
