Beef and Barley Stew
A hearty stew for those cold, wet days. Tender beef, root vegetables, and barley will fill your belly.
Ingredients
- 1 pound beef stew meat or round steak cubed
- 1/4 cup pearl barley rinsed and drained
- 1 & 1/2 cups diced onion
- 1 turnip peeled, cut into 1/2 inch cubes (1 and 1/2 cups)
- 2 cups diced carrots
- 1 cup thinly sliced celery or grated celeriac
- 2 cups low sodium beef broth
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon dried sage
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 2 cloves garlic minced
- 1 bay leaf
- Salt to taste
Instructions
- Salt the meat. Place in the bottom of a crock pot and add the barley on top.
- Add onions, turnips, carrots, celery, and spices.
- Pour broth over the top.
- Cook on low 9-11 hours
- Remove bay leaf before serving
