The Plan:
Day 1: Grilled chicken kabobs and mixed vegetables (cherry tomatoes, broccoli, mushrooms, zucchini) with classic barbecue rub
Day 2: Cilantro lime rice burrito bowls, Peaches and blueberries with fresh whipped cream
Day 3: Homemade pizza
Day 4: Hamburgers with tzatziki sauce, Roasted sweet corn salad, Peaches and cream pie
Day 5: Lemon butter cod, Steamed green beans, Easy cucumber tomato salad
Day 6: Nachos with quick pickle banana peppers and homemade Pico de Gallo
Day 7: Egg scramble with tomatoes and basil, Zucchini muffins, Melon salad
This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. I sincerely hope this will help with your own meal planning!

CSA Breakdown:
For those of you also using Crossroads Community Farm, here is a breakdown of how I will use each piece of produce this week. See the first CSA post from this season for details of how I structure the plans.
1 Tomatoes (1.0 increment): sweet corn salad, cucumber tomato salad, pico de gallo
2 Banana Pepper (1.0 count): quick pickled to serve on nachos
1 Beans, Green (1.0 bag): steamed and drizzled with olive oil and salt to serve with cod
1 Broccoli (1.0 head): grilled mixed vegetables
1 Zucchini, Green and/or Gold (1.0 count): I have an extra one so I’m using one in grilled mixed vegetables, the other will be used in zucchini muffins
1 Muskmelon, Sugar Cube (1.0 count): Peeled and diced to make a melon salad with watermelon
1 Cilantro (1.0 bunch): 1/3 bunch in cilantro rice, 1/3 bunch in corn salad, 1/3 bunch in pico de gallo
1 Basil (1.0 bunch): 1/3 bunch in egg scramble, the rest will be put in my dehydrator to save for the winter
1 A2 Watermelon (1.0 count): cut into chucks for melon salad
1 Tomato, Sungold OR Red Cherry (1.0 pint): grilled mixed vegetables
2 Cucumber (1.0 count): 1 in cucumber tomato salad, 1 in tzatziki
6 A1 Corn, Sweet (some tips cut) (1.0 count): sweet corn salad
